A BRIEF HISTORY OF THE TUSCAN CUISINE
The origins of Tuscan cooking date back almost 3000 years when the region was settled by teh Etruscans from Asia Minor. Replaced by the Roman Empire around the 3rd century BC, who were notorious for their banquets where rare and costly delicacies were served.
The influx of the Germanic invaders in the 5th century forced the population in Florence and other cities back to the countryside. Many of Tuscany’s most typical dishes date back this time. For example Tuscan bread was made without salt, which was a precious import only the rich could afford.
Through the centuries, as people became richer larger kitchens were installed and cooking became more refined. The Medici family of the 15th century helped Florence became a major European centre for culture and intellectual life. The "art of entertaining" took an important place. Tuscany lived its period of greatest glory during the Renaissance, which was practically invented by the region.
Since then, Tuscan cooking has returned to its rural, peasant roots. The finest and freshest of local ingredients are used in uncomplicated dishes given extra taste by local herbs such as basil, rosemary, thyme, parsley and sage.
